A new chapter in Old Perth’s sherry maturation story. This Amontillado Edition blends mature Speyside single malts with a savoury new-make profile, selected for its synergy with Amontillado cask influence.

Amontillado gets its unique flavour from two stages of aging - first protected by a layer of yeast, then exposed to air to develop more complex, nutty notes. Unlike the deeply sweet and fruity character of Pedro Ximenez or Oloroso sherries, Amontillado offers a drier, more savoury character.

Non-chill filtered and no added colour. Only 7,800 bottles available worldwide.

Tasting Notes

Nose: Toasted hazelnuts, crushed almonds, with dried apricots and baked stone fruits.

Palate: Golden sultanas and dried peaches with a soft, buttery texture and a whisper of biscuit sweetness.

Finish: Liquid drawn from nine hogsheads and six butts with almost three years further aging in first-fill Amontillado sherry casks.
