Island Slice's Single Dark Rum is a deep, full-bodied spirit with a warm finish. Aged in ex-Speyside whisky casks, this unique Scottish dark rum is rich and complex.
It's delicious on its own, but pairs beautifully with apple in the simple Apple Slice cocktail:
Ingredients
- Island Slice Single Dark Rum 50ml
- Cloudy Apple Juice 150ml
- Apple slices to garnish
Method
- Fill a highball glass with ice
- Pour in the dark rum
- Top up with cloudy apple juice and stir gently
- Garnish with an apple slice or cinnamon stick
Top Tip: Try it warm! This is a beautiful autumn/winter warmer when served gently heated. Add a spice twist with a dash of cinnamon or star anise, too, for extra depth.

The Island Slice Story
Born in St. Lucia, Sylvester Herman's journey to becoming a rum producer is as rich and complex as his spirits. From his early days learning rum-making from his father in Lamáze to his travels through New York, Germany, and service in Iraq and Afghanistan, Sylvester brings a wealth of experience to every batch of IslandSlice Rum.
After serving in the British military and later with Police Scotland, Sylvester founded IslandSlice in 2016, following the passing of his father. During those difficult days, he documented everything his father had taught him about rum-making – knowledge passed down from generations of ancestors who first developed these techniques.
What began as a small operation selling rum punch cocktails quickly gained momentum. At his first market event at Lomond Shores, Sylvester arrived with 250 bottles expected to last the weekend – they sold out by 2pm on the first day. He rushed home to make more, returning with 500 bottles that also quickly sold out.
Initially blending and spicing shop-bought rums, Sylvester's entrepreneurial journey took a significant turn when an HMRC representative, impressed by his knowledge and passion, encouraged him to distil his own rum. With his first still crafted from the parts of an immersion heater, IslandSlice truly began to take shape.
"I'm proud Scottish and I'm proud St. Lucian," says Sylvester. "With my rum, I'm bringing the two together."
