Don Papa Rum 70cl
Don Papa rum is produced on the island of Negros, or Sugarlandia, as it’s known to the locals in The Philippines. With its long history of sugarcane cultivation, ancient sugar mills and humid tropical climate, it's the ideal place for maturation.
This rich, smooth rum captures the quality of the island’s sugarcane grown in rich volcanic soils, its local ageing in oak for over seven years, and the skill of Don Papa’s blenders. After fermentation, and continuous distillation in column stills, the spirit is cut with spring water from Mount Kanlaon before being filled into ex-bourbon and ex-Rioja barrels.
Named after Papa Isio, a revolutionary hero in the Philippines’ War for Independence in the 1890s, Don Papa is inspired by this courageous figure and is the embodiment of the spirit of Sugarlandia.
Superb in cocktails, but just as good neat.

Tasting Notes
A fresh and zesty aroma, with roasted citrus, mango and strawberries. Ripe mandarins, soft brown sugar and vanilla feature on the palate, followed by oaky spices and a rich, dark honey finish.

Ingredients
- 45ml Don Papa 7 Year Old
- 22.5ml fresh lime juice
- 5ml simple syrup
- 2 drops hopped grapefruit bitters
- 1 egg white or 1/3 of a dropper (approx. 3ml) of Ms. Better’s Miraculous
- Foamer Bitters (for an egg-free alternative) lime twist to garnish
Method
Combine ingredients in a cocktail shaker and shake without ice for 10-12 seconds.
Add ice and shake for another 10 seconds before straining over fresh ice in a rocks glass.
Garnish with a lime twist.
