These large and heavy lemons are hand-harvested, then walked through steep hills for immediate transport to the distillery. The lemons are immediately peeled, paying special attention to peeling the zest from the lemons without the white bitter pith. The peels are vacuum sealed and used within 24 hours after they have been harvested. Our process ensures that only the yellow lemony part of the lemon is used for our limoncello. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe peels are then soaked in pure alcohol made only from natural molasses sugarbeets.
