Fifty years ago, GlenAllachie Master Distiller, Billy Walker, began his whisky journey
as a blender. he joined a team creating Iconic Blended Scotch Whiskies to be enjoyed
across the globe. In 2021, Billy honoured his roots in the industry with the relaunch of White Heather Blended Scotch Whisky, and is now proudly showcasing his latest creation; a limited release 15 year old.
He sourced the finest single Malt and Grain whiskies from across the Highlands, Islay and Speyside to craft a recipe with a particularly high single malt content. Using a combination of premium American and Spanish oak casks, the blend was laid
to rest for an additional 3 years for the flavours to marry and the wood to impart
additional depth and complexity.
As described by the IWSC judges, “Here we are drawn in with an exuberant, floral nose presenting delicate notes of ripe lemon and fine-grained oak. The palate is complex and perfumed and reveals a wonderful ashy smoke quality and delicious malted cereal flavours. Outstanding!"

Tasting Notes
Colour: Golden Bronze
Nose: Waves of heather honey and butterscotch, followed by orange peel, pineapple, mint and a hint of peat.
Taste: Layers of treacle, heather honey and butterscotch, followed by orange peel, grapefruit and almonds, with mocha, ginger and a light whisp of peaty smoke on the finish.

Nestled at the foot of Ben Rinnes lies one of the best-kept secrets in Speyside: GlenAllachie Distillery and its Master Distiller, Billy Walker.
Having been crowned winners of the Scottish Distillery of the Year award at the inaugural Scottish Whisky Awards 2019, the small team at GlenAllachie use their drive, passion and desire to create whiskies to be proud of.
Billy Walker's Blending Technique
The “Billy four step” is a complex (and expensive) blending technique but it delivers every time.
1. Sourcing exceptional malt and grain whiskies from across Scotland to create the required flavour profile.
2. Initial blending so that the subtle nuances of each individual whisky combine and enhance the blend, never competing, never overpowering.
3. Then filled to selected casks, in specific quantities, which are laid to rest in their warehouses to let the flavours marry.
4. Monitoring the journey and development of each cask over the years before ultimately selecting the individual puncheons and barrels for the final blending and bottling at 46%, non chill-filtered and natural colour.
