Fortaleza Tequila Reposado
Reposado tequila is aged in oak barrels for 2-12 months, giving the spirit a golden colour and a smoother, more mellow flavour than blanco varieties. As with whiskies, this aging process imbues a complex flavour profile into the spirit unique to the type of barrels used.
Fortaleza Tequila Reposado is aged in American Oak before being bottled in hand-blown Mexican glass. Aromas of citrus, caramel, butter, cooked agave, and sage are the beginning of a pleasingly balanced and very unique tequila. Fortaleza Reposado has a distinct character unlike any other tequila.
Flavours include cooked agave, citrus, vanilla, apple, earth, and cinnamon. The finish is long and rich, delicately spicy, and it has an oily texture that makes this a joy to drink. Made by the fifth generation of the Sauza family in Mexico, Gulliermo Sauza is honouring the tradition of his family and using artisanal methods to create the best 100% agave tequila that tastes like no other.
They take the Pina’s (heart) from the Blue Weber Agave and cook them in their over 100 year old oven for 40 hours. Once cooked the Pinas are crushed and they use traditional methods which involve a big stone Tahona. This 500kg wheel is made out of the granite stone found in the tequila mountain and is over 100 years old. Tahona crushing does not produce high yields as it cannot crush as much as industrial methods. From Tahona crushing you get around 65% of the juice available from the agave's however these are the sweeter parts of the plant as they are the softest parts. It means you get less bitter and harsh flavours in your tequila, but it does make the production process very expensive too. This crushing process also takes a day and a half to compete. Quite a job!
Their fermentation is completely natural, and the process takes about 5 days. They then distill twice to only about 60% ABV this means they have to use much less water to bring it down to the 40% we are looking for. Some distilleries will distill to a much higher ABV say 80% in order to get a higher yield of liquid in the end. Fortaleza want to contain and keep as much of the natural agave flavour as possible.
The result is a very unique, artisan tequila which certainly tastes like no other.
